I Bought A Watermelon Part 2

Even after making the Aqua de Sandia I still had watermelon and scraps left over. On my social media feeds I kept getting reels of making sour patch watermelon candy at home. I cut the green rind off the watermelon leaving the white and small pieces of pink to process. Those pieces were cut into small thin slices. They were placed in a container and covered with sugar. I popped them into the fridge to macerate overnight.

The next evening I poured what was now very soft watermelon bit and a lot of liquid in a pan and began the very slow process of turning them into candy over a medium to low heat.

The reels stated this part should only take 20 minutes. 50 minutes later I finally reached the correct stage for the watermelon candy.

I poured them out of the hot pan, sprinkled citric acid and granulated sugar over them. They are not the prettiest snack, but honestly are somewhat addictive. They kind of taste like Sour Patch Watermelon Candy but without strange chemicals or colorings. To increase the sourness factor I would simply sprinkle more citric acid over them.

It was a fun experiment, but a lot of work for a candy that is just okay. Like most things on the internet and social media it looked easy and fast but in reality was not either of those things.
