Not in My Plans

My DD and friend saw some fancy cookies they wanted to make on TikTok (I think). I thought they looked AI generated but the ladies claimed they were shortbread and not AI. They picked a day to make them at our house. I asked do you have a shortbread recipe? We are going to look for one:( I do have a Scottish Shortbread 1875 recipe. I made this recipe probably about 40 years ago. I remember the cookies are delicious, but not a joy to make. It is simple - butter, sugar and flour being the ingredients.

Well they made the recipe but found it to be too crumbly to make cut out cookies. The “creator” also wrote that you needed to place the dough in the fridge/freezer for 2 hours to chill before you cut out anything. We now have a very large tray of shortbread. It is as delicious as I remember and just as crumbly.

We also have my grandfather’s sugar cookie recipe and I convinced them to try to make the fancy cookies out of sugar cookie dough which is more amendable. This worked out much better for them. They were able to successfully reproduce the inspiration photo cookies.

As a bonus there was extra dough left over. Guess who now has some Christmas cookies already made:) The extras will freeze perfectly.

As an aside I hate Tiktok recipes - they are usually impossible to recreate. They are often posted by people who really have no idea of what they are doing in the kitchen. I do not claim to be a great chef or baker but I have been around the block in a kitchen and have learned some things. In the end it all worked out. The baking ladies were happy with their cookies (which are adorable) and had a great time baking together.
