Roasted Red Peppers
I have a few recipes that use roasted red peppers. I was not happy with the price of this item in the grocery. I looked around on the internet and thought I can make those. You are able to can roasted red peppers, but not in oil. (canning oil is a no no). You have to can them in water. You can also roast them and freeze them (as you can freeze cut up peppers). I have not tried that but imagine they will be mushy to a certain extent.
I went ahead and roasted all the peppers I just bought. I used my oven to roast them and it worked fine. I sprinkled olive oil and salt and pepper on them before the roasting. It took about 30 minutes (I checked them every 10 minutes). Bad internet sensation that I am forget to snap a picture after the roasting.
The recipe I found stated you could keep them in oil in the fridge and they would last for 6 months. All the peppers I had yielded 2 pint jars. We shall see if this works. The 5 pounds of peppers I purchased was still cheaper than one jar of the roasted kind in the grocery.
