Instant Pot Yum

The other night our DD was not going to be present for dinner. I took advantage and made a dish that she does not like at all for my husband and me. I sometimes add a pound or tow of Italian sausage to my meat order. I use it to make Sausage Rigatoni. Our DD does not like sausage in any form so this treat has to be saved for when she absent from the dinner table.

It is a nice quick meal because you can use only your instant pot to make the entire thing. I did not have any ricotta cheese in the fridge and I proceeded anyway. No one even noticed.

The recipe makes quite a lot. We had dinner and more than enough for lunch leftovers the next day.
