Candied Orange Peel
Well the oranges I did not zest had their peels carefully cut off to begin the process of candied orange peel. When you cut off the rind you are trying to get as little of the white pith as possible (this is what makes the peel bitter).
I then sliced the peel into thin slices. You have to try to remove as much of the bitterness of the peel as possible. I put all the peels in a saucepan cover with water and bring to a boil. You only need to boil for a few minutes. Drain the peels and repeat the process at least 3 times. After the third go round taste one of the peels to assess the bitterness. If still too bitter keep boiling water with the peels until you are happy.
I then make a simply syrup of water and sugar. I simmer the peels in this mixture for about 20 minutes. I drain them - save this syrup! I use it to make mocktails (see picture below). Shake the wet peels in a container filled with granulated sugar. Place them on wire racks to dry overnight.
You now have homemade candied orange peel. I will eat these without anything else, but have also been known to dip them in chocolate - delicious. These keep quite well in a glass jar on your pantry shelf (and look beautiful) or you can vacuum seal a few in small bags to give as gifts.
