Cranberries All Over
Well pumpkin week was such fun I decided cranberries needed their canning moment too! I love the look of cranberries in a canning jar. I think it is their deep rich coloring. In the United States at least now is the time to stock up on cranberries.
The first item I made was jellied cranberry sauce. I place this in wide mouth jars so it will slide out exactly like the tin canned variety. Only mine is much nicer, it only contains cranberries, water and sugar. Cranberries have loads of natural pectin so none is needed to get a good set up.
I then moved on to try a few new to me recipes. I made Cran-Lemonade. This should be delicious. I canned it in quart jars. It contains cranberries, sugar and lemon juice.
I also canned Cranberry Sangria (no alcohol). This contains cranberries, blueberries, sugar and orange juice. This takes at least 2 weeks before it can be opened.
The last item I canned in quart jars is Cranberry Sweet Tea. It contains cranberries, an orange slice, cinnamon stick, sugar and black tea. I am very interested in taste testing these in a few weeks.
