Now I am a Sausage Maker

My Dh and I enjoy a nice cheese and cracker platter. We would like to have a sausage option but once I read ingredients I always shy away from the processed meat.

I have begun to follow a woman on Instagram, Homebeginswithlove. She has a lot of children and does great meal prep ideas using normal ingredients. She posted a recipe for a summer sausage and I thought I would give it a try. From listening to her it appears she has a scientific background and follows basic food safety rules, (Pet peeve rant: influencers who give out absolutely horrible canning or meal prepping advice. You are literally making food that people will eat, the basic requirement for that is that it should make them ill).

Anywoo…I thought I would give it a try. The ingredient that was a little bit difficult to source was the Morton’s Tender Quick salt. Walmart had it but it was out of stock (really Walmart, just how many people are rushing to buy salt for curing meats - just asking for a friend). I finally was able to get it shipped from Walmart. I now have enough to cure multiple animals for the next 30 years.

This is not a spur of the moment cooking plan. You have to mix all the spices and salt with the meat and let it sit (refrigerated) for 24 hours before it is baked.

It is baked at a low heat for 2 hours. It turned out delicious. I have made this twice already and I am sure I will continue to make it.
