Red Peppers

On my last Costco adventures where I bought the case of lemons I also bought a large bag of red peppers. I had a plan folks.

The first part of the plan was making roasted red peppers. Those jars are expensive in the store. About 6 months ago I tried making my own and storing them in olive oil in the fridge. They were perfect and have all been used. I needed more. I do the “fancy” roasting right in my oven. We must be one of the few American couples who do not own a large grill. My DH does not enjoy cooking meat over an open flame. I have no feelings =either way but know I have no desire to cook large portions of meat over an open flame either so we are not big “grillers.”

After the peppers were roasted I cut them into strips, placed in a glass jar filled it with olive oil and put a lid on it. I now have a few jars of raosted red peppers. These keep in the fridge for 6 months.

I then decided I wanted to try making my own pimentos. You know them as the little red thing inside of olives. Occasionally I will find a recipe that calls for pimentos ( I am looking at you chicken a la king) and again the tiny jars are expensive for what you get. Very mushy, limp red things. I found a recipe from a trusted source and went for it. Pimentos are actually just pickled red peppers.

I ended up with 3 jars. The recipe cautioned you to let them sit for 2 weeks before opening. These are not canned and have to be kept in the fridge. I have a few more days before I can try them. Thus ends the red pepper adventure.
