Canning Watermelon Lemonade

Watermelon is in season and we are enjoying our fill. Sometimes you just have had all the watermelon you want for the moment and want to store and savor the flavor.

Watermelon by itself is unsafe for canning, though you can dehydrate it. I decided to make some watermelon lemonade concentrate.

The first step was to squeeze a lot of lemons to get 4 cups of juice. I then had to puree the watermelon. Once you puree watermelon and strain it you realize once again why the word water is included in the name.

After I added all the ingredients together to heat up I did just the tiniest little taste test. It tasted like a Jolly Rancher - so we were headed in the right direction!

I ended up with 8 pints of the concentrate. Due to the addition of lemon juice I could safely water bath can these beauties. These will be delicious in the dead of winter to open and get a taste of summer.
