My school has an enclosed courtyard with some fruit trees and plants. One of the trees is a pomengrante tree. The other day our custodian picked them. No one at else at school wanted them so I took them all home with me.
These had plenty of arils, they were not the deep red color I have seen before but I decided to try to make jelly with them. They are organic because I doubt anyone has sprayed anything on these trees. I cut them all open and decided to use my steam juice extractor.
This what they looked like after about 40 minutes in a steam bath. The fruit always looks so sad after a steam extraction. All of them yielded a little shy of 5 cups of juice.
I only need 3 ½ to make the jelly. Once I had the juice the rest was easy. The jars all sealed and it looks like the jelly set up quite nicely. It turned out a lovely pale red color. I snuck a taste off of the stirring spoon (after I had canned everything) and I think the flavor is nice.
Of course I have juice left over so there will be more jelly adventures very soon. For the eagle eyed among you that is the sour dough starter jar in the background:)
