You Put the Lime in the…
My local grocery store discounts fruit each morning. There is nothing wrong with the fruit selections but they are just too close to their use by date. You can really pick up some bargains if you get there early in the morning. Each bag is 99 cents.
I sometimes stop at the store after an early morning workout. I hit the lime jackpot one day. They had 2 bags of organic limes for 99 cents. Each bag contained 2 pounds of limes. Total was 4 pounds of organic lines for $1.98. They immediately went into my cart. I also had a bag of oranges in the same trip.
I scurried home with my treasures. I juiced the oranges and provided 3 glasses of fresh squeezed orange juice for breakfast. It was delicious and my DH and DD were thrilled with the unexpected treat.
Before juicing the lines I washed them to remove any residue and dirt. I then zested about ½ of them.
To dry my zest I just place it on a tray and leave it overnight. I live in a very dry climate so it completely dries overnight.
After it dries completely I place it in a small glass jar. I now have delicious lime zest to add to drinks and baked goods. I only zest organic fruit. Citrus fruits tend to be one of the most heavily sprayed fruits you can purchase.
But I wasn’t done with the limes. I squeezed them and got 2 cups of lime juice. In the same trip I found cherries on sale. I washed and pureed those after processing the limes. Mixed those 2 together with some sugar and canned up a batch of cherry limeade concentrate. It was a few hours of kitchen work but I certainly got a lot for under $2.00.
